Mini Buffet cum Big Feast at Home

It has been a long time since I cooked a decent meal for hubby. Since he had class and my parents are not free to meet, I stay at home to do some cooking lor. 2 of us only but there are 5 dishes. haha.. So I think its appropriate to treat this as a mini buffet. This buffet was done 2 weeks ago.

Mini Buffet cum Big feast at home

Ingredients:
1 egg
1 tube of tofu (mashed)
100g minced meat
5 prawns (minced)
3 tsp corn flour
Seasoning:
pepper
salt
sesame oil
1) Mix all together

2) Steamed in a tray

3) Cut them and deep fried them.

Final Baking for CNY

With CNY just 3 days away, I finally finished baking the last batch of cookies. Love the cashew nut cookies and decided to bake more of these. Quite satisfied with what I had achieved this year. Managed to bake 4 different types of cookies. The only regret is no pineapple tarts. :(

Bak Chang

Today is an eventful day. Hb won movie tickets at Surf's Up at the new AMK hub Cathay. The show was at 10 am and we need to wake up early to collect at 9.30. After show, went out lunch with my family for father's day celebration.
Got home around 5 and finally I started to make the bak chang myself for the 1st time. Of coz, I had called my grandma in M'sia for tips on preparing the ingredients yesterday. hehe...

Washed and soaked the leaves.Marinated the meat.Cooked the mushrooms, chestnuts and dried oysters.
Today
Soaked the rice this morning.Fried the hae bee and rice.Start wrapping and cooked them for 2 hours. Yeah.. can eat liao.

1st feast after our wedding.

The TOTM at NK is eggs so I thought of making these eggs dishes today with other dishes as well.
Its my first attempt in making these eggs dishes. Verdict fm hb are as follow:
Potatoes Eggs
Verdict: Potatoes a bit too bland and not firm enough. There were some whereby the eggs are separated from the potatoes.

Verdict: Nice but should have added some cut chilli or spring onion in the fish paste so that they will look more colourful. Maybe I should get some seaweed also. Maybe, can shallow fry them after steaming and cutting.

Dinner

I have not been cooking for a long time as was busy preparing for wedding. Finally, I have time to come home after work to make dinner. Here they go.... Sweet & Sour Fish AND China chye sim. But I think the chye sim are too old liao so a bit tough. Not much ingredients left in the fridge so no other ingredients (pinapple, cucumber, capsicum) to fry the sweet & sour fish. But they turned out nice too... I am amazed that we can finished all.. haha..

I wanted to bake cornflakes cookies. Josh suggested this method of melting chocolate is much more simpler. Initially, I heard of this method. Its just that I have not tried double boiling before. Fearing that it will be difficult. After Josh's explanation, I decided to give it a try and here they are... I love them....
Packed these cookies with my chocolate chip cookies to give to colleagues for xmas. Hope you all enjoy them and do not mind the home made cookies. :)

Feast of the month

Whip up another feast today. Isaac is going back to India end of the month and going to UK to work. Moreover, his wife will be going back to India first on 16th so we decided to invite them over for dinner tonight. At the same time, hubby also invited some ex colleagues over for dinner. The dishes are almost the same. I really wanted to make something different. Seemed like hubby only know to order these few dishes for gatherings. haiz... Initially, wanted to make pizza but realised I do not have cornmeal. Then decided to make the no baked cheesecake since I have cheese in the fridge. After preparing biscuits base, realised I do not know to how fix the mixer. So cant make cheesecake also. :(

Snowskin Mooncake

Made the snowskin mooncake tonight. Went to choose and try gowns for the photos shooting in the afternoon and then went Bugis Junction for dinner. Actually, was too tired liao. But I already bought the ingredients last sat. If I dun make some today, I afraid I cant finish them by Friday.

This year, decided to stick to snowskin mooncake using Josh's recipe. Last year, I failed to bake the mooncakes and the ingredients ended up in the rubbish bin. Such a big waste. :( But I do not know what happen this year also. Many cracks in the mooncakes and so uneven. So sad.. Maybe will try making them tomorrow or Wednesday.

Coleslaw

With Tina's tips, I decided to make some coleslaw to go with the spaghetti and baked chicken.


It also had been so long I baked cripsy chicken. Yeah. turned out better than previous times. Best of all, no oil was used. :)


Made 1 plate of spaghetti to share also. Seemed like we had a heavy dinner tonight. *guilty*

Claypot Vegetables Yi Mee

No more kuay teow when I went to market during lunch time. But had a nice lunch instead. :) Still feel like cooking one dish meal for tonight dinner. Decided to use my new claypot and cook Yi Mee with all the vegetables I have. Though no meat, it cannot be considered as a vegetarian dish as I put shallots and egg. I only cooked one piece of Yi Mian out of the whole packet. We still have problem finishing this claypot. Think I add too much vege & tau pok.

Chocolate Mousse cake

Today, went to Josh house to collect the mixer and also learnt how to make the cake from him. When I saw his posts days ago, I like it very much and am sure my hubby will like it. So decided to learn from him at the same time. hehe...
Today is really a fruitful day for me @ Josh place, received a mixer, learnt the cake method, saw his flowers and plants, had seafood pasta made by Josh and I even had the chance to bring back the cake. Thanks, Josh!!!

Spaghetti

Ever since I started to work in the new job, today is the 1st time I experienced heavy rain after work. It had been almost a month already. Wanted to cook porridge again. I thought having porridge on a rainy day will be quite nice. BUT when I reached home, I feel like cooking spaghetti. Haiz.. This is me. Always change my mind. haha... In the end, spaghetti for dinner.
I have cabbage & carrot in the fridge and a bottle of salad cream bought by hubby. Feel like making coleslaw for him as he asked me whether I know how to make coleslaw. Frankly speaking, I do not know. haha... I was brought up in a kitchen with chinese cooking. No western cooking. I learnt how to cook spaghetti on my bintan trip. Josh taught me how to make it before. However, I did not take down the notes. I just cut the vege and put in the salad cream and little bit of salt. Taste very funny. Think I am wrong to use the salad cream. Must go and check with my shi fu later. haha :P

The pooh play room had been shut down temporary for operations. However, her hands are so itchy today and wanted to bake a cake for her new colleagues. Guess what? After I put in the sugar and butter into the bowl, the cake mixer is not responding at all. It is down.... Sob.. sob... There are 250gm butter and 200gm of sugar. I really do not wish to see them ending up in the rubbish bin. It is such a big waste if I throw them away. Went over to my neighbour & see whether I can borrow one from them. BUT they do not bake so no electric mixer to lend.
Tried online at MSN but no advisor is around to assist me. I decided to use the newly purchased wire whisk and beat them manually. I remembered I beating something manually during sec school days. Its baking in the oven now. Don't know how the texture will be like. Its very tiring to beat them manually. HOPE it will turn out well.
Anyway, the master agreed to get the pooh play room a new toy. hehe... A good excuse for me to buy something. Been thinking of the mixer from KitchenAid all along. But I do not think I will get it this time round. Unlike Josh, I will not make very good use of this mixer. He can play with that toy better than me. Moreover, its so expensive. Better don't waste money. I will just get one normal electric mixer.

Too lazy or too busy??? haha...

Been too busy or too lazy to post? I also dunno. My dear hubby is on diet prog now so the pooh play room have to be shut down for operations coz no one to be my guinea pig liao. haha.. But I wanted to make something today. Will see how later. hehe...

Baking time

He is trying to rush out one report so we cannot go out today. After finishing the housework in the morning. Went online and met Josh and Judy there. Discussing what should we do today. Josh wanted to go Daiso @ IMM. I decided to bake something for my colleagues to eat since I am leaving in 2 weeks' time. Initially, wanted to bake cookies and cake today. By the time I reached home, its already 5 plus. Decided to bake the butter cake 1st. It took me almost an hour to finish baking the loaf cake. After the baking and dinner, sianz already. hehe.. so no cookies.

1st housewarming

Invited colleagues and bosses for dinner last night. These are what I prepared for them. Sorry, the photos are not taken well as I took the photos after they started. Very typical chinese dishes. Not salad or cake. I like the NK gathering at Edith's place. A well mixture of both chinese and western dishes.

Hainanese Chicken Rice that I learnt from my maternal grandfather



Hakka Yong Tau Hoo that I learn from my paternal grandmother.



There are tau pok with the fillings, tau kwa with filling and mushrooms with fillings. This dish can be quite time consuming. Need to cook the soup base for a long time to get the sweetness. The fillings also have to be marinated before they can be filled in the tau pok, tau kwa and mushrooms. After that, still have to shallow fry them before adding them into the soup. Now, I missed the charcoal stove at my parents house. Think the soup tasted nicer with that type of heat.

This mee goreng was fried at last minute. After my colleagues, nothing much was left. So fried this for my brother and father. Luckily, still have noodles in my fridge leftover from morning. Fried mee goreng in the morning for him to bring to his office for lunch. So rare that I am on leave so can make something for him to have home cooked lunch.
