Fried Carrot Cake and Vegetarian Noodles for breakfast

Saturday was a rainy morning so lazy to go market to buy breakfast. Told hubby maybe I fry carrot cake for breakfast. 

Hubby: mummy, you frying carrot cake? If not, I going to cook instant mee liao. 
Mummy quickly got out of bed and make these for breakfast.





Black Carrot Cake for the boy and the man. But of course, not spicy

White Carrot cake for the mummy and the boy who love to eat crispy stuff.

Ingredients:
Ready made carrot cake (Got mine from Sheng Siong). Some NTUC also carry this packed carrot cake.
Chai Pok
Used 1 egg for the white carrot cake 
Used 2 eggs for the black carrot cake
Some minced garlic
Spring onion for garnishing

Vegetarian Noodles

Feast on a Good Friday

Since my boy has no class on a Good Friday, we decided to stay at home to rest and let him play lego. While he plays the Lego, I whipped up something that I have not cooked for some time.

Vegetarian Curry Vegetables

Ingredients:

Cabbage
Potatoes
Carrot
Long Beans
Fried Tau Kee
Tau Pok
Ikan Brand Curry Vegetable Paste
Coconut Milk

Fried Bee Hoon

Braised Pork Belly with Quail Eggs, black fungus and Tau Pok



Have a good friend who stays nearby. Asked her whether she wants some food as well. She bought me some fishballs from my favourite stall from Bendemeer Market. Tada... our "barter trade". lol

Dinner on 27.02.17

I am flying off on Wednesday and decided to cook a good dinner for the family. Invited my parents, Vernon's aunt and sis in law over for dinner.

1. Tofu Puffs

No exact measurement of the recipe.

Ingredients:

Chopped carrots
Minced chicken
Prawn Paste
Prawn bits
spring onions
Sesame Oil
Oyster sauce
starch
pepper
soya sauce
Tofu from Ntuc



Use low heat to fry them as they get burnt easily.
2. The man requested for chicken rice...I am so happy with my chicken rice tonight. The rice was nicely done. The chicken was also tender.

Min Jiang Kueh

I have been wanting to attempt to make min jiang kueh. Came across this video on https://www.facebook.com/meatmen.sg/videos/970140706360472/ in the morning so decided to make this for Brayden's breakfast before he goes for his Sat classes.

I think it needs a longer time to ferment. I prepared it in the morning.

I brought the peanut powder from NTUC.

Baked Salmon and potatoes

Hubby wanted a simple dinner on Friday so baked Salmon and potatoes for him

Simple breakfast

I learnt this method of steaming egg from the farm host during the holidays. 

She steamed 4 eggs at one go. Boil the water in the pan. Put in the baking paper and pour the eggs into the baking paper. Steam for 2 minutes. woohoo.... Sunny Side up without oil.



Pizza

My first bake for 2015.

Feeling bored at home since I cannot go anywhere. Decided to make pizza for the family. Think I have not made this for almost 7-8 years. Haha. I used the breadmaker to knead the dough.

Verdict: Crust is too thick and not cheesy enough.

Hakka Soon Kueh aka Hakka Soon Pan

Hakka Soon Kueh aka Hakka Soon Pan-Father's day celebration on 15.06.14

I remembered my late paternal grandmother often made these for the family. However, I did not manage to learn the recipe for the soon kueh skin. I only remembered that she had to steam yam and mashed it. She also took out a dough and cooked it in boiling water. I also cooked the filling based on estimation and my family's taste.


1. Steam 300g yam and mash them with 150g of tapioca flour. I omit 5 spice powder as I don't remember my grandmother using them.




2. I fried dried cuttlefish, dried shrimps, black fungus, chinese mushrooms. orange tau kwa with the turnips.




When I was wrapping the soon kueh, I was thinking it shall be my last attempt. It was so hard managing the skin. they broke easily. :( 


However, I will attempt again as I was quite satisfied with the results.




Hakka Yong Tau Hoo

Hakka Yong Tau Hoo-Father's day celebration on 15.06.14

This is a dish that I learnt from my late paternal grandmother. My brother and father like this dish. Usually, we will use yellow beans and pork ribs to cook the soup base. Since I cooked Chicken Rice, I use the chicken stock as the soup base.

My hubby and helper do not take pork so I made some using minced chicken for them.

 The yong tau hoo after frying. Some people will steam them. But frying them will be nicer.
