Hakka Soon Kueh aka Hakka Soon Pan

Hakka Soon Kueh aka Hakka Soon Pan-Father's day celebration on 15.06.14

I remembered my late paternal grandmother often made these for the family. However, I did not manage to learn the recipe for the soon kueh skin. I only remembered that she had to steam yam and mashed it. She also took out a dough and cooked it in boiling water. I also cooked the filling based on estimation and my family's taste.


1. Steam 300g yam and mash them with 150g of tapioca flour. I omit 5 spice powder as I don't remember my grandmother using them.




2. I fried dried cuttlefish, dried shrimps, black fungus, chinese mushrooms. orange tau kwa with the turnips.




When I was wrapping the soon kueh, I was thinking it shall be my last attempt. It was so hard managing the skin. they broke easily. :( 


However, I will attempt again as I was quite satisfied with the results.




Hakka Yong Tau Hoo

This is a dish that I learnt from my late paternal grandmother. My brother and father like this dish. Usually, we will use yellow beans and pork ribs to cook the soup base. Since I cooked Chicken Rice, I use the chicken stock as the soup base.

My hubby and helper do not take pork so I made some using minced chicken for them.

 The yong tau hoo after frying. Some people will steam them. But frying them will be nicer.

I managed to pick up this dish from my late maternal grandfather. Hubby love this and I have not cooked for it for a long time. 





Chicken Shepherd Pie

I remembered I made this during Sec School Home Econs lesson. I like Shepherd Pie but people usually sell the beef filling. Difficult to get chicken shepherd pie. I like the Chicken Pie and Shepherd Pie from Don Pie http://www.donpieclub.com.sg/. 

Moreover, Hubby prefers western food to Chinese cuisine. I need to google an easy recipe for the potato as I want to cook the chicken filling based on hubby's taste. He doesn't like onion as most of the recipes called for onion. Thus, I still used the recipe from this site even though they ask for beef filling. http://www.soshiok.com/recipe/shepherds-pie-recipe.

1. Fry chicken chunks, minced chicken, mixed vegetables with Campbell Cream of Chicken.


2. Cook 1 kg of Russel potatoes, add 1/2 teaspoon salt and cook covered until tender. Drain. Mash potatoes and add 20g butter while hot. Add 100ml milk and mix well. Season with one teaspoon salt and pepper. See more at http://www.soshiok.com/recipe/shepherds-pie-recipe

3. Lay the chicken fillings in the containers and cover the fillings with the mashed potatoes. Brush the surface with egg mixture. 

  
tada....The big one for sharing at lunch.
 The small ones for my parents and sis in law to pack home.
